The Cask Series Cabernet Sauvignon was created exclusively for Club TSV members. This is the first vintage in the series, on the heels of the popularity of the Cask Series Cabernet Franc. Although 2018 was cool, there was good ripeness and flavour development. The grapes for this wine were sourced entirely from the Estate Vineyard in the unique Niagara River sub-appellation.
The wine was matured for 16 months in a first use 5000 litre French oak cask. The wine was not fined or filtered, and the result is a very unique and delicate expression of Cabernet Sauvignon. The nose has a fruity character of dark cherries, plums, and blackberries, with hints of loam, clove, and black pepper. There is a veiled note of toasted oak. The palate is wonderfully soft and complicated. The fruits are evident, harmonizing with an earthy character of fallen leaves, dried savory herbs, and black tea. This Cabernet Sauvignon is all about finesse and balance, as silky tannins create a supple texture and enjoyable mouthfeel.
