2017 Stone Eagle Cabernet Sauvignon is a very limited production wine, made because of the sheer quality of the vintage. This is an exceptional expression of Cabernet Sauvignon, demonstrating the hallmark complexity of our cool climate, yet exhibiting the concentration of a very warm year.
The wine is dominated by ripe black fruits, balanced with a characteristic earthiness seen only in the best years. This Cabernet Sauvignon is aged for 42 months in barriques to develop character and intensity. The wine is deliciously complicated, with lovely blackberry and black currant fruit harmonizing with distinct flavors of leather, tobacco and bitter dark chocolate. Extraordinary balance of flavor, texture and structure make this Cabernet Sauvignon undeniably ‘Stone Eagle’. Serve with whole roasted beef tenderloin, New York steak, rack of lamb or old cheddar.
